What I Cooked This Week: Baked Spaghetti, Spinach & Tomato Quesadilla with Pesto, and Baked Fish

 This week I have a tried and true old recipe to share, a new recipe, and a typical meal for me.

First up, old faithful:  Baked Spaghetti

This is a recipe I like to serve when I have company for a couple of different reasons.
 1) It's spaghetti, who doesn't love spaghetti?
 2) I can prepare it ahead of time and just pop it oven when were ready to serve dinner.

When I have company over, I don't want to be isolated in the kitchen.  I want to be enjoying my guests, so recipes like these work perfect for company.


This is as simple to make as lasagna or regular spaghetti with meat sauce.  The only difference is your putting it in a baking dish, adding three different cheeses and butter, and baking it.  Of course, there's a lot more fat and calories in this dish than in regular spaghetti, but that's why you only serve it when you have company.  I guarantee, it's so good you won't have any leftovers.


I serve this recipe with a slice of garlic bread and a side salad.

My next recipe is a new one I tried, it's called:

Spinach & Tomato Quesadilla with Pesto


Unlike the last new quesadilla recipe (see that post HERE) I tried, this one I LOVED.  The flavors were so delicious, and of course it was super easy to make so that was a huge plus too!

I love Mediterranean foods, so it's no wonder I like this recipe.  It has feta in addition to mozzarella cheese, plus pesto, Roma tomatoes, and spinach.  Mmmm, it's so good!

And finally, sometimes I think I give the impression that I eat a lot of fatty/high calorie foods.  I really don't, and if I do, I eat a very small portion and usually freeze the rest in tiny one cup containers to be eaten as a lunch another time.  Most of the time I eat a lot of salads, or baked chicken or fish.  Below is a typical dinner for me that I would eat at least once a week.

This plate contains my protein (baked fish), a starch (noodles sautéed in olive oil with mushrooms), and grilled vegetables.  I usually don't even have noodles on my plate, but we had too many mushrooms in the refrigerator that were starting to go bad, and this was the best side dish I could come up with to use them all up.  Most days I would either have a sweet potato, mashed cauliflower, or a salad with my fish.
