What I've Been Eating

I may not look like it, but I LOVE to eat.  I once heard that Katherine Hepburn said she did not like to eat.  I always thought that was so odd.  Food is not just  enjoyable to me, but I don't like how I feel when I'm hungry.  I not only experience hunger pains, but I also get irritable, nauseous, tired, and I get headaches.  Hence, dieting never works for me.  But healthy eating (with the occasional cheat), portion control, and exercise does.

The last time I did a food post, I shared Some of My Favorite Recipes.  This time it'll be a little different as I will share my favorite breakfast, a new recipe and a recipe that I tried but it didn't quite work,

First up,  My Favorite Breakfast.  
One over-easy egg with turkey (or real)  bacon and avocado on toast.

Mm mm.  I could eat this every morning.  It's loaded with protein and tastes so good!

                                                             Roasted Cauliflower Soup

I have never had Roasted Cauliflower Soup and I wanted to try it, so I made this recipe.  I thought it tasted very good.  I don't know if I was crazy about it enough to make it again, unless I had a surplus of cauliflower to use up.  It was a lot of work to make (for me anyway, I don't like to spend a lot of time in the kitchen) and my husband wouldn't eat it (he's really picky about certain foods) leaving me to have to eat the whole pot myself!  I ended up freezing most of it by putting it in individual glass serving dishes.  It freezes quite well;  tasting just as good as when I first made it.


 I really enjoy whipped cauliflower (in place of mashed potatoes) which is a little less work than the soup;  so that's probably why I wouldn't make the soup again and the flavor of the soup didn't really "wow" me.


                                               Finally:  A Recipe That Didn't Quite Work
                                                  Tuscan Artichoke Stuffed Pasta Shells

When you look at this dish doesn't it look like it would be delicious?  Well, looks can be deceiving because it was absolutely flavorless.

Whenever I decide to try a new recipe I always look at the ingredients because I know if I like the ingredients, I'll like the recipe.  I loved all the ingredients in this recipe, so I thought it would be great.  And it was, but it just seemed to lack flavor.  When my husband and I dug into it we both found it very bland.  So we sprinkled on some additional salt and pepper (which I never do) and then some dry Italian seasoning.  That seemed to help.


I went back and looked at the recipe again thinking I must have missed some key ingredient, but I didn't.  I finally theorized that it is probably because I used the recommended marinara sauce instead of usual Prego or Aldi brand which has more kick.  I also noticed there was not any Parmesan cheese in this recipe nor any additional herbs or spices, which in my opinion always adds a lot of extra flavor.


Would I make this recipe again.  Probably not.  I have another stuffed shell recipe I like much better that uses spinach instead of artichokes.  But, I enjoyed trying it!


Not every recipe is a win-win for everyone.  But it is always fun trying new ones;  for when I discover new ones I love, I'm one happy woman!

  1. The breakfast does look and sound delicious! Must try! I have never tried any of the other two, although I do love cauliflower. I made an Italian dish before that we didn't like...but I agree it's always fun to try new things.
    BTW we LOVE the chicken recipe you shared last time. Shared the recipe with my brother in Germany and he loved it too! It's crazy how easy that one is to make and soooo good!
