This week I have a couple of new recipes I tried, an old breakfast favorite of mine, and a restaurant dish to share!
First up, a new recipe:
Creamy Broccoli, Chicken, and Bacon Pasta.
My dish did not turn out anything like the picture, but then on their website, they have all the ingredients separated in the pictures even though the instructions say to combine.
I had the same problem making this recipe that I've had with all the cheese sauce recipes I've tried. I couldn't get the cheese to melt...it ended up clumpy. You can see the clumps of cheese in the picture above...see all the little white dots? I stir and heat FOREVER and it still never melts. I just can't get that smooth consistency. Does anyone have any tips for this?
Other than the clumping, I really liked the flavor of this dish. It was a lot of work though because you have to fry up the bacon, chicken, boil noodles...etc., etc., etc. I read a great tip on another food website that said to fry up a package of bacon ahead of time and then put in the freezer. Then when you need bacon crumbles for a recipe, you have it ahead of time. I think I will do that, someday!

My next dish I did not make but enjoyed at Victoriano's NY Style Pizza & Pasta in Stillwater, MN.
My husband and I were antique shopping in this quaint, historic town last weekend and decided to pop in for a slice of pizza. I was thrilled to see they had a healthier version of pizza that I could enjoy.
Baby Arugula and Chicken Pizza
When I saw all this uncooked lettuce I wasn't sure I was going to like it at first. But I ended up really enjoying it. It had a delicious flavor with all the different blends of cheeses they put on it and I have no idea what that brown sauce is, but that was yummy at well.
I do have mention that we had horrible, horrible service here. It was all a huge misunderstanding/mistake, but it ruined our lunch nevertheless. The management was kind, but they were very busy. There was a large take out order and people ahead and behind us in line. We waited forever for our two slices of pizza, and when the clerk finally brought our order up he gave it to the wrong customers. My husband insisted the order was his and that they were behind us in line, but the clerk insisted he was wrong and the other customer said nothing to back up his story. So we waited forever again and this time they brought out only one slice of pizza...mine. Again, my husband waited and waited, while I ate alone and without him outside on the patio. I was so looking forward to eating lunch outside and enjoying the beautiful weather TOGETHER but that never happened. Finally when I was about half way through my lunch, he asked about his again...and they never even cooked it! Rather than waiting any longer, he just got refunded his money back and went hungry until dinner. I did end up giving him about half of my pizza slice though...I felt so sorry for him.
I think that was the first time I ever had to get my money back at a restaurant. Has anyone else ever had a really bad restaurant experience?
My next dish is one of my favorite breakfasts:
Baked Eggs in Canadian Bacon Cups
This is a very healthy, delicious, and easy way to make eggs. I made this recipe myself, but if you ever have to serve a large crowd breakfast, this would be a perfect recipe!
You simply spray a muffin pan with non-stick spray, lay Canadian bacon inside, and drop an egg in. Sprinkle on some salt and pepper and pop in the oven and wa-la....you have a delicious, nutritious breakfast!
You can find the recipe HERE. They used silicone muffin cups for their recipe. I just used a standard muffin tin. I also did not heat up my Canadian bacon separately either.
My final dish is from the South Beach Diet. I've been watching my carbs lately and I have always had a lot of success with this old diet plan. I made this recipe the other night and my husband went on and on about how delicious and flavorful it was. He absolutely loved it. It's called
Easy Chicken in Wine Sauce
The only change to the recipe I made was that I used white cooking wine instead of real wine.
I served my chicken with sautéed spinach and mashed cauliflower.

Amy, I came over from your great comment at Living on Cloud Nine. Like you, I enjoy a blog where you simply scroll down to look at the blog posts in chronological order (one of the reasons I chose Blogger when I started blogging more than six years ago). I've had a similar experience to your pizza lunch, and it is very disappointing. Was the brown sauce by any chance balsamic vinegar?
