An Old Favorite Recipe and Some New Ones

The long winter months are great times to spend in the kitchen.  Summer is about salads, smoothies, and grilling out.  Winter is for cooking and baking.  The recipes I have to share today contain one old favorite recipe and two new ones I tried.

First up, an old favorite:  Black Bean Enchiladas!

This is a recipe I have been making for years.  It's from the book "Vegetarian Times Vegetarian Beginner's Guide".  I can't find the recipe on-line, but you can buy the book for almost nothing on Amazon.  And if you don't want to buy the book and just want the recipe,  email me and I'll send it to you.

I had a lot of tortilla shells leftover from a New Year's party so I made a ton of Mexican dishes the past few weeks and this was one of them.  It's one of my favorite meatless dishes because it's so hearty and flavorful.  It's basically just black beans, tomatoes and chilies rolled into shells, covered in enchilada sauce and sprinkled with cheese.  Other than the cheese, it's pretty healthy!


 Of course when you add the sour cream the health benefits go out the window, but who can eat Mexican without sour cream?  That's my favorite part!


Now for my new recipes that I tried this week.  I came across a Salisbury steak recipe and thought "Mm, I haven't had Salisbury steak since I was a child.  That looks delicious, I will have to try it".

The recipe is called "Salisbury Steak with Mushroom Gravy" and you can find it HERE.  And you can also find better pictures there too.  I really need to improve on my food photography.  Part of it is I use my IPhone to photograph food because it's quick and handy.  Another part  is when I make it, I'm in a hurry to eat it, and I don't want to waste much time photographing it.  And yet another part is a lighting issue.  It's always dark out when dinner is done, so the lighting is terrible.  But if I'm going to keep reviewing recipes, I know my photography has to get better cause this picture looks like someone barfed on my plate.  But trust me, it was DELICIOUS!


I found it very easy to make.  I loved the mushroom sauce.  But the real test was if my husband liked it.  He enjoyed it, but he said he'd rather have my meatloaf.  Would I make it again?  Definitely "yes", but not as often as I make my meatloaf.


Now the next recipe my husband loved!  And why wouldn't he?  It was basically pizza in a bowl!  I was really nervous to feed him this dish, because I don't think he ever had Gnocchi before.  He is such a "meat and potatoes man".   I thought he would really freak out over this dish, but you know what ladies?  He was crazy for this recipe!  I was shocked!  I never heard so much "oohing" and "ah hing" by him over food before.  I was so happy I found something new he would actually like!

The name of this recipe is "Cheesy Sausage Gnocchi Skillet" and you can find it HERE.  If your kids love pizza, they would love this recipe!  But be warned, it is not healthy!  It contains 609 calories per serving and 30 grams of fat!  Yikes!  Portion control is a must if you eat this dish.


My favorite part of this recipe is it is made and cooked all in one dish.  I love that!  The less clean-up the better.  It is quite spicy due to the Italian Sausage, or it could just be me, I don't like overly spicy foods.  You could cut back on the pepper or eliminate it all together if it's too spicy for you.


And those are two new recipes I tried last week.  Thankfully, no duds this time.  I liked them both.

  1. These look delicious! I never had Salisbury steak before, might have to give that one a try. My family loves mushrooms!
    I don't think I've ever had gnocci before either, although I am sure I'd love them, because I love pasta/noodles in any form and shape. Will have to find an alternative to sausage, not a big fan of it..I won't even eat pizza with sausage, and I am not usually a picky eater :-)
