I don't think Gessoed pages are gritty. I wonder if you're putting it on too thick? Are you drying it with a heat tool and then ironing after? As for an alternative, I have found that prepping the page with white craft paint works awesome. It's a technique I've seen no one else use, so I will feature it on my blog first. You simply paint a thin layer of white craft paint in the area you want to journal/color. Let it air dry or dry with a heating tool. You can then do anything you want without worrying about it bleeding through the other side. The only thing you can't do with craft paint is cover the words of your bible with it or it will cover up the words. The glitter gel pens I use are by Kaiser Craft. They are the best!
